Description

Meat and Seasoning

  • 3 to 4 pounds boneless chuck roast – excess fat trimmed
  • Kosher salt – about 2 teaspoons total
  • Ground black pepper – about 1 teaspoon total

Onion and Aromatics

  • 4 large yellow onions – thinly sliced
  • 6 cloves fresh garlic – minced
  • 4 tablespoons unsalted butter

Liquids & Flavorings

  • ¾ cup dry white wine (Sauvignon Blanc or Pinot Grigio)
  • 1 tablespoon all-purpose flour
  • 3 cups beef broth – plus more as needed
  • 2 tablespoons Worcestershire sauce – plus more to taste

Herbs

  • 3 bay leaves – fresh or dried
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme

  • 1 cup freshly shredded Gruyere cheese
  • Sliced baguette – for serving

Instructions

  1. Preheat Oven: Preheat your oven to 300 degrees F to prepare for slow braising.
  2. Season Roast: Pat the chuck roast dry. Season both sides generously with kosher salt (about 1 teaspoon per side) and ground black pepper (about ½ teaspoon per side).
  3. Sear Roast: Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on both sides, about 5 minutes per side, until a golden crust forms. Remove from pot and set aside.
  4. Caramelize Onions: Reduce heat to medium. In the same pot, melt the butter. Add the sliced onions and cook, stirring occasionally, for 25 to 30 minutes until they turn a light brown color, adding broth as needed to deglaze the pot.
  5. Add Garlic and Deglaze: Stir in the minced garlic, cooking for 2 minutes, then add the white wine to deglaze the pot. Let the wine reduce by half.
  6. Add Flour and Liquids: Sprinkle in the flour and stir to coat the onions. Then add beef broth, Worcestershire sauce, bay leaves, rosemary, and thyme. Bring the mixture to a simmer and season with salt and pepper.
  7. Braise Roast: Return the roast to the pot, ensuring the liquid covers about ¾ or more of the meat. Cover tightly and braise in the oven for 3 hours and 30 minutes until fall-apart tender.
  8. Optional Additional Braising: For extra tenderness, continue cooking for an additional 20 minutes.
  9. Shred and Remove Herbs: Remove pot from oven and increase oven temperature to 400 degrees F. Shred the beef into smaller chunks, discard excess fat, bay leaves, and herb bundles.
  10. Add Cheese and Melt: Evenly top the beef with shredded Gruyere cheese. Return the pot to the oven for 5 to 7 minutes until the cheese melts.
  11. Serve: Serve warm over mashed potatoes or your favorite sides alongside toasted baguette slices. Enjoy your French Onion Pot Roast!

Notes

  • Use dry white wine like Chardonnay or Pinot Grigio to balance rich caramelized onions and prevent bitterness.
  • Four large yellow onions may seem like a lot but will reduce significantly during caramelization.
  • Caramelizing onions takes time (25-30 minutes). Cook until light brown as they continue caramelizing in the oven.
  • The braising liquid should cover about ¾ or more of the beef; add extra broth if needed.
  • Use freshly shredded Gruyere cheese for better melting.
  • Reheat leftovers in the microwave, adding more cheese or a splash of broth as needed.
  • Substitute sweet onions for yellow onions for a different flavor profile.
