Description

Fiesta Chicken Casserole is a flavorful and easy-to-make baked dish combining creamy soup, salsa, taco seasoning, rice, beans, corn, and tender cooked chicken, topped with melted cheddar cheese for a comforting and festive meal perfect for family dinners or gatherings.

  • 1 can cream of chicken soup
  • 1 cup salsa thick
  • ¼ cup sour cream
  • 1 tbsp taco seasoning
  • 1 cup instant rice parboiled rice
  • 1 can black beans drained and rinsed
  • 1 can sweet corn drained and rinsed
  • 3 cups cooked chicken cubed
  • 2 cups cheddar cheese shredded

Instructions

  1. Preheat oven: Preheat your oven to 375℉ and spray a 9×13 baking dish with non-stick cooking spray to prepare it for the casserole.
  2. Mix base ingredients: In a large mixing bowl, combine the cream of chicken soup, thick salsa, sour cream, and taco seasoning. Stir these ingredients well to form a smooth and flavorful mixture.
  3. Add main mix-ins: Add the instant parboiled rice, drained and rinsed black beans, drained and rinsed sweet corn, and the cooked cubed chicken to the soup mixture. Stir thoroughly until all components are evenly combined.
  4. Transfer to baking dish: Spread the combined chicken and rice mixture evenly into the prepared baking dish, ensuring a flat and level surface for even cooking.
  5. Add cheese topping: Sprinkle the shredded cheddar cheese evenly over the top of the casserole mixture to add flavor and a melty crust.
  6. Bake the casserole: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes or until the casserole is bubbly and the cheese is fully melted and slightly golden.

Notes

  • Use any brand of instant rice such as Minute Rice or Uncle Ben’s. If substituting cooked rice, use 2 cups cooked rice instead of 1 cup instant rice and skip the soaking process; do not use uncooked long-grain rice.
  • Opt for chunky or thick salsa for a richer texture. Alternatively, canned diced tomatoes with green chiles can be used for a different flavor profile.
  • To prevent cheese from sticking to the foil during baking, spray the underside of the aluminum foil with cooking spray before covering the dish.
