Description
A classic British no-bake dessert, Banoffee Pie combines a crunchy biscuit base with rich caramel, fresh bananas, and fluffy whipped cream, topped with dark chocolate shavings for an indulgent finish.

For the base:
- 200 g Digestive biscuits, crushed
- 100 g Unsalted butter, melted
- 1/2 tsp Salt
For the caramel:
- 80 g Unsalted butter
- 80 g Dark brown sugar
- 397 g Can of condensed milk (1x tin)
For the topping:
- 2 Bananas, peeled and sliced
- 300 ml Double cream, whipped
- 10 g Dark chocolate (for shavings)
Optional:
- 2 tsp Vanilla extract
- 2 tbsp Icing sugar
Instructions
- Prepare the base: Mix the crushed digestive biscuits with melted butter and salt until well combined. Firmly press the mixture into a 23 cm removable base flan tin using the back of a spoon. If possible, chill the base for 30 minutes to set.
- Make the caramel: In a small non-stick saucepan over low heat, melt the butter and sugar together, stirring continuously. Once the sugar has fully dissolved and turned liquid, add the condensed milk. Increase heat to medium and stir constantly as the caramel bubbles rapidly for about 1 minute until it thickens to a golden color.
- Assemble caramel layer: Spoon the caramel mixture onto the biscuit base and smooth it evenly. Chill the pie for a minimum of 1 hour until the caramel sets.
- Add toppings: Arrange the sliced bananas evenly over the set caramel layer. Whip the double cream until firm but soft, optionally mixing in vanilla extract and icing sugar, and spread it over the bananas.
- Finish and serve: Sprinkle dark chocolate shavings on top using a vegetable peeler. Serve chilled and enjoy the creamy, sweet banoffee pie.
Notes
- You can substitute digestive biscuits with graham crackers or any dry biscuit adjusting butter as needed for the right texture.
- To prevent bananas from browning, toss them lightly in lemon juice before topping the pie.
- Double cream should be whipped to hold shape yet remain soft and smooth; in the USA, heavy cream can be used as a substitute.
- Vanilla extract and icing sugar can be added to whipped cream for extra flavor but are optional.
- Dark chocolate shavings add a nice finishing touch but you can also use cocoa powder or sprinkles as alternatives.
