  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) light brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 ¼ cups (150g) all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Buttercream

  • ½ cup (113g) unsalted butter, 1 stick, at room temperature
  • 3 cups powdered sugar
  • 2 tablespoons milk or heavy cream
  • 1 teaspoon pure vanilla extract
  • Green food coloring

To Decorate

  • 1 cup Cadbury mini eggs or M&M eggs

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (180°C) and lightly spray a mini muffin pan with baking spray.
  2. Make Cookie Dough: In a large bowl, using a hand electric mixer, beat the butter with the granulated and light brown sugars until light and creamy, about 2 minutes.
  3. Add Egg and Vanilla: Add the egg and vanilla extract to the mixture and beat until well combined.
  4. Incorporate Dry Ingredients: Add the all-purpose flour, baking powder, and salt; beat again on low speed until just combined.
  5. Portion Dough: Using a small cookie scoop, divide the cookie dough evenly between the mini muffin cups.
  6. Bake: Bake for 12 minutes. Once removed from the oven and while still warm, gently push down the center of each cookie cup with a teaspoon to create room for frosting (optional).
  7. Prepare Buttercream: In a large bowl, beat the butter until creamy using an electric hand mixer. Gradually add the powdered sugar to avoid a sugar cloud, mixing at low speed.
  8. Add Milk and Flavor: Add milk, vanilla extract, and green food coloring if desired. Beat again until smooth and adjust consistency with more powdered sugar or milk as needed.
  9. Frost and Decorate: Frost each cookie cup with the green buttercream and top with Cadbury mini eggs or M&M eggs for decoration.
