Instructions
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, chili powder, cumin, smoked paprika, and dried oregano. Add the chicken to the skillet and cook for 2 to 3 minutes or until cooked through.
- Add Ingredients: Add chopped onion, minced garlic, and red bell pepper to the skillet with the chicken. Cook until the onion becomes translucent. Stir in refried beans and water, cooking for 2 more minutes until the mixture slightly reduces and thickens.
- Warm Tortillas: Microwave the flour tortillas for about 30 seconds to make them pliable and easier to fold.
- Assemble Burritos: Lay a tortilla flat and layer with Mexican rice, chicken filling, corn, and shredded cheddar cheese. Fold the tortilla up burrito-style. Repeat to make 8 burritos.
- Toast Burritos: Option 1: Wrap burritos in foil and bake in a 350°F oven for 10 minutes. Option 2: Pan-fry over medium-high heat for 2 minutes per side until crispy and cheese melts. Option 3: Heat vegetable oil in a skillet over medium heat and cook burritos seam side down, turning to brown all sides for about 3 minutes per side.
- Serve: Serve hot with salsa, sour cream, and nacho cheese sauce on the side.
