Description

This comforting Crockpot Chicken and Stuffing recipe combines tender slow-cooked chicken with savory vegetables and flavorful stove top stuffing. Perfect for an easy, hands-off meal that delivers classic homestyle flavors.

Ingredients

Scale

Vegetables

  • 2 medium carrots diced
  • 1 small yellow onion diced
  • 2 medium celery ribs diced

Chicken and Seasoning

  • 5 pounds whole chicken
  • 1/2 cup salted butter melted
  • 1 teaspoon poultry seasoning
  • 1 teaspoon paprika

Stuffing

  • 6 ounces box stove top stuffing any flavor

Instructions

  1. Prepare the Slow Cooker: Add the diced carrots, onion, and celery to the bottom of the slow cooker to form a flavorful bed for the chicken.
  2. Prepare the Chicken: Place the whole chicken on top of the vegetables, ensuring the inside cavity is cleaned and emptied before discarding any contents.
  3. Season the Chicken: Pour the melted butter evenly over the chicken, then sprinkle poultry seasoning and paprika on top. Rub the seasonings all over the chicken for even flavor. Optionally, add salt and pepper to taste.
  4. Cook the Chicken: Cover with the lid and cook on high for 6 hours until the chicken is thoroughly cooked and tender.
  5. Prepare the Stuffing: Carefully remove the chicken and set it on a platter. Cover with foil to keep warm. Remove all liquid from the slow cooker, reserving 1.5 cups of the liquid along with the cooked vegetables left in the slow cooker.
  6. Cook the Stuffing: Add the box of stove top stuffing to the slow cooker and stir to combine with the reserved liquid and vegetables. Replace the lid and cook for an additional 10 minutes.
  7. Finish and Serve: Fluff the stuffing with a fork once done cooking. Slice the chicken as desired and either place it back into the slow cooker for presentation or serve directly. Enjoy your hearty meal!

Notes

  • Use any flavor of stove top stuffing to vary the taste.
  • To add more seasoning, salt and pepper can be added to the chicken before cooking.
  • If you prefer a crisper skin, you can place the cooked chicken under a broiler for a few minutes after slow cooking.
  • Save the reserved liquid to keep the stuffing moist and flavorful.
  • Make sure the chicken is fully cooked to an internal temperature of 165°F for safe consumption.
  • You can add garlic powder or fresh herbs for additional aroma and taste.
