Instructions

  2. Dredge the Zucchini: Coat each zucchini slice thoroughly in the seasoned flour, tapping off any excess, then dip into the beaten eggs, allowing excess egg to drip back into the bowl before pressing it into the Panko bread crumbs to coat all sides well. Place coated slices on a platter and repeat with remaining zucchini.
  3. Heat the Oil: Warm a large, heavy-bottomed non-stick skillet over medium heat. Pour in enough oil to cover about 1/4 inch of the pan. Heat the oil to 350˚F (or test by dropping a breadcrumb into the oil to see if it sizzles).
