Description

These easy grilled BBQ chicken drumsticks are crispy, flavorful, and perfect for any meal. With a homemade BBQ spice blend and a smoky grilled finish, they make a delicious main course that’s finger lickin’ good and easy to prepare.

Ingredients

Scale

Chicken

  • 2 lb. chicken drumsticks (legs)
  • 1/2 cup BBQ sauce (choose a BBQ sauce that aligns with your dietary restrictions)
  • 2 tablespoons olive oil

BBQ Spice Blend

  • 3/4 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Prepare the Spice Blend: In a small dish, combine chili powder, salt, pepper, garlic powder, smoked paprika, onion powder, and cayenne pepper (if using). Stir well to mix all spices evenly.
  2. Season the Chicken: Pat the chicken drumsticks dry with paper towels to remove excess moisture. Drizzle olive oil over the drumsticks, then sprinkle the spice blend evenly. Toss the chicken to coat all pieces thoroughly with the oil and spices.
  3. Preheat the Grill: For gas grill, heat to medium-high (about 400°F). For charcoal grill, set up two heat zones—one medium-high and one medium-low.
  4. Grill the Chicken (Gas Grill): Place drumsticks on clean, well-oiled grates over medium-high heat. Turn them frequently until skin is browned and crispy on all sides.
  5. Finish Cooking (Gas Grill): Lower grill heat to medium-low (about 300°F) and close the lid. Cook chicken for about 25 minutes, turning once halfway through until fully cooked.
  6. Grill the Chicken (Charcoal Grill): Start by placing drumsticks directly over the medium-high heat side, turning often to brown the skin. Then move the drumsticks to the cooler, indirect heat zone, cover the grill, and cook for 25 minutes, turning once halfway.
  7. Apply BBQ Sauce: Brush each piece of chicken with BBQ sauce during the last few minutes of cooking to caramelize the sauce without burning.
  8. Check for Doneness and Serve: Confirm the internal temperature of the chicken reaches 165°F (74°C) using a meat thermometer. Serve immediately while hot and juicy.

Notes

  • For advance prep, mix chicken with oil and spices, cover tightly, and refrigerate up to 18 hours before grilling.
  • Air fryer adaptation: Preheat to 400°F. Lightly oil basket, place drumsticks spaced apart, and cook 18-22 minutes, turning once halfway. Check internal temp reaches 165°F.
  • Oven adaptation: Preheat to 400°F (~204°C). Place drumsticks on lined baking sheet and bake 40-45 minutes, turning halfway. Ensure internal temperature is 165°F.
  • Use a meat thermometer to ensure safety and perfect doneness.
  • If you want extra heat, add more cayenne pepper or hot sauce to the BBQ sauce.
