  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons capers
  • 2 tablespoons lemon juice
  • 2 tablespoons parsley, chopped
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, to thicken)

Instructions

  1. Prepare Chicken: Pound the chicken breasts to an even 1 inch thickness using a meat mallet or rolling pin and season both sides with salt and pepper.
  2. Dredge Chicken: Coat the chicken thoroughly in flour, shaking off any excess flour before cooking.
  3. Cook Chicken: Heat 1 tablespoon of butter and the olive oil in a large skillet over medium-high heat. Pan-fry the chicken breasts for about 5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the pan and set aside on a plate.
  4. Sauté Garlic: In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté until fragrant, about 30 seconds, being careful not to burn it.
  5. Deglaze and Make Sauce: Reduce heat to medium-low. Pour in the chicken broth and scrape the browned bits from the bottom of the pan for flavor. Add in the heavy cream and bring the mixture to a gentle boil.
  6. Add Flavorings: Stir in the capers, lemon juice, and chopped parsley. Taste the sauce and season with salt and pepper as needed.
