- 2 boneless, skinless chicken breasts (about 1.3 lbs)
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp freshly cracked black pepper
- 1/4 cup all-purpose flour
- 2 Tbsp olive oil
- 2 Tbsp butter, divided

- 1 whole garlic bulb (about 8–9 garlic cloves)
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Prepare the chicken: Using a sharp knife, fillet each chicken breast into two thinner cutlets or use thin-cut chicken breasts for even cooking. Season both sides with Italian seasoning, salt, and black pepper. Sprinkle flour evenly on both sides and rub it in to coat the chicken well.
- Cook the chicken: Heat a large skillet over medium heat and add olive oil and 1 Tbsp of butter. When hot, add the chicken breasts and cook about 4 minutes per side until golden brown and fully cooked through. Remove the chicken to a clean plate and cover to keep warm.
- Prepare the garlic: While the chicken cooks, peel the garlic cloves. Smash them gently using the side of a large chef’s knife by pressing down with the heel of your hand, releasing more flavor.
- Sauté the garlic: In the same skillet, add the remaining 1 Tbsp of butter. Add the smashed garlic cloves and reduce heat to medium-low. Sauté the garlic for about 3 minutes or until lightly browned and fragrant, stirring often to avoid burning.
- Make the sauce: Pour in chicken broth and heavy cream, add garlic powder, and stir to combine. Scrape up any browned bits from the skillet bottom. Simmer the sauce for 8 to 10 minutes until it thickens and reduces by about half. Taste and season with additional salt and pepper as needed.
- Combine and serve: Return the cooked chicken breasts to the skillet and coat them with the creamy garlic sauce. Warm through for a couple of minutes. Optionally garnish with fresh chopped parsley and serve immediately to enjoy the rich flavors.
Notes
- You can substitute boneless, skinless chicken thighs if you prefer a juicier cut.
- For convenience, pre-minced garlic (about 2.5 Tbsp) can be used instead of fresh garlic cloves.
- Be careful not to burn the garlic during sautéing as it will turn bitter.
- Serve with steamed vegetables, mashed potatoes, or crusty bread to soak up the sauce.
