A refreshing and creamy street corn and cucumber salad mixed with rotisserie chicken and a zesty yogurt-based dressing, perfect for a light meal or side dish.

- 1 1/2 english cucumbers halved and sliced (about 3 cups)
- 2 cups rotisserie chicken chopped
- 1/4 cup cilantro minced
- 3 green onions sliced
- 1 jalapeno seeded and diced
- 1/4 red onion diced
- 1/2 red bell pepper seeded and diced
- 15.25 oz can sweet corn drained
Dressing
- 1/2 cup plain greek yogurt 2% or higher for creaminess
- 1/3 cup mayonnaise
- 1 lime, juice and zest of
- 1 clove garlic finely minced or grated
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp salt
- 1/4 tsp freshly cracked pepper
Instructions
- Prepare the cucumbers: Lay the cucumber slices in a single layer on paper towels, then add another layer of paper towels on top, pressing it into the cucumbers to absorb the moisture. Leave them to dry under the paper towels while you prep the rest of the ingredients.
- Make the dressing: In a medium bowl, combine greek yogurt, mayonnaise, garlic, lime juice and zest, chili powder, paprika, cumin, salt, and freshly cracked pepper. Whisk until smooth. Taste and adjust the seasonings to your liking, adding more cumin or chili powder if desired.
- Combine salad ingredients: In a large mixing bowl, add cucumbers, drained corn, chopped rotisserie chicken, cilantro, green onions, jalapeno, red onion, and red bell pepper.
- Dress the salad: Pour most of the dressing over the salad ingredients and use a spatula to mix until all ingredients are evenly coated. Use the remaining dressing based on your preference.
- Chill and serve: Serve the salad chilled. Store leftovers in the fridge in a tightly sealed container.
Notes
- After the salad sets in the fridge, a little liquid may settle at the bottom from the cucumbers and yogurt. Carefully pour out any excess liquid and toss the salad before serving.
- You can add extra chili powder or cumin to the dressing for a spicier flavor.
- Use Greek yogurt of 2% fat or higher for a creamier texture.
- This salad is best served chilled and can be stored in the refrigerator for up to 2 days.
- If rotisserie chicken is unavailable, cooked shredded chicken or canned chicken can be used as a substitute.
