Cottage Cheese Alfredo Sauce
- 1 cup milk of choice
- ½ cup cottage cheese
- 1 tablespoon cornstarch
- ¼ teaspoon salt
- ⅛ teaspoon freshly cracked black pepper
- ¼ teaspoon garlic powder
- ½ cup grated fresh parmesan or fresh romano cheese
- dried basil to taste
- dried oregano to taste

Instructions
- Blend ingredients: Add 1 cup milk of choice, ½ cup cottage cheese, 1 tablespoon cornstarch, ¼ teaspoon salt, ⅛ teaspoon freshly cracked black pepper, ¼ teaspoon garlic powder, and ½ cup grated fresh parmesan into a blender. Blend until the mixture is completely smooth, pausing to scrape down the sides as needed.
- Simmer sauce: Transfer the smooth mixture to a small saucepan. Stir in dried basil and dried oregano to taste. Place the saucepan over medium-low heat on the stovetop and simmer, stirring frequently, until the sauce is heated through completely.
- Adjust seasoning: Taste the sauce and add additional salt, pepper, basil, and oregano according to your preference.
- Thicken sauce: Reduce heat to low and simmer the sauce for approximately 5 minutes, stirring occasionally, until it thickens slightly.
- Toss pasta: Add the desired amount of prepared pasta to the sauce. Use tongs to toss the pasta to coat it fully with the sauce. Let it simmer together for 2 to 3 minutes.
- Serve: Transfer the coated pasta to plates or bowls. Top with prepared meat or vegetables if desired. Spoon any remaining sauce over the pasta, garnish with chopped fresh parsley, and serve immediately.

- For a low-fat version, use skim milk, low-fat cottage cheese, and reduced-fat parmesan cheese.
