Instructions

  1. Read directions: Read the entire recipe first to understand the flow and preparation steps before starting.
  2. Blanch asparagus: Bring a pot of salted water to a boil. Cut fibrous ends off asparagus, set aside tips (1 1/2 inches) and middles. Separate 1 1/2 cups of middles for blanching. Blanch these in boiling water until tender and vibrant, about 5 minutes. Drain, reserving 1 cup cooking liquid.
  3. Prepare asparagus puree: Blend the blanched asparagus middles with 1 cup of reserved cooking liquid, 2 tablespoons olive oil, and basil leaves until silky smooth. Set aside.
  4. Prep leeks: Thinly slice leeks into half-moons, rinse to remove dirt and prevent scorching. Heat remaining 2 tablespoons olive oil in a pot over medium-low heat. Add leeks and garlic, sauté until soft and fragrant, about 5 minutes.
  5. Toast rice: Add arborio rice to the pot with leeks and garlic. Stir to coat the rice in oil and toast for 1 minute.
  6. Deglaze with wine: Add white wine if using, cook off the alcohol completely while stirring.
  7. Add broth gradually: Add 1 cup hot vegetable broth to the rice, stirring occasionally until mostly absorbed. Continue adding broth 1 cup at a time, stirring often, allowing rice to absorb each addition before adding more. You may not use all broth as asparagus puree adds moisture later.
  8. Cook asparagus tips: When adding the last 1/2 cup broth, add reserved asparagus tips to cook in the risotto for about 3 minutes. Rice should be creamy and slightly al dente.
  9. Combine and season: Stir in asparagus puree, add salt, pepper, and lemon juice to taste. Adjust seasoning. Optionally, add pecorino cheese for extra flavor.
  10. Finish and serve: Gently heat over low, allowing risotto to thicken slightly but not lose its vibrant color. Divide among bowls and garnish with lemon zest, basil ribbons, pecorino, chili flakes, nuts, or leek oil as desired.

  • Start risotto and blanch asparagus simultaneously to save time.
  • Add 1 cup peas or edamame for protein or top with seafood or chicken for a heartier meal.
