Tortilla Pinwheels are a flavorful and colorful appetizer featuring a creamy blend of cheeses, green chiles, corn, jalapeno, black beans, and taco seasoning rolled inside flour tortillas. - 1 can (15.25 ounces) whole kernel corn, drained
- 1 medium jalapeno pepper, seeded and diced
- ½ cup black beans, rinsed and drained
- ¼ cup green onions, chopped
- 1 tablespoon taco seasoning
Assembly
- 12 flour tortillas, 8 inches

Instructions
- Prepare the Cheese Mixture: In a large bowl, beat the cream cheese, shredded Monterey Jack cheese, and sour cream together until the mixture is smooth and well blended, providing a creamy base for the pinwheels.
- Add the Vegetables and Seasoning: Stir in the drained chopped green chiles, whole kernel corn, diced jalapeno pepper, rinsed black beans, chopped green onions, and taco seasoning until evenly combined throughout the cheese mixture.
- Assemble the Pinwheels: Divide the cheese and vegetable mixture evenly among the flour tortillas. Spread the mixture into an even layer over each tortilla, then roll each tortilla tightly to form a log shape.
- Chill: Place the rolled tortillas in a baking dish and cover with plastic wrap. Refrigerate them for at least 2 hours or up to overnight; chilling firms the filling and makes them easier to slice.
- Slice and Serve: Once chilled, unwrap the tortillas and cut each roll into ¾-inch thick slices. Arrange the pinwheels on a serving platter and serve with salsa on the side for dipping if desired.
