Description

  • 14 ounce coconut milk (1 can)
  • 14.5 ounce diced tomatoes (1 can)
  • 2 tablespoon tomato paste
  • 2 tablespoon sugar

Instructions

  1. Cook the chicken: Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for about 5 minutes, stirring occasionally, until the chicken is no longer pink inside and begins to brown slightly.
  2. Add aromatics and spices: Add the chopped onion, minced garlic, and curry powder to the chicken. Stir well and cook for 2 more minutes until the onions soften and the spices become fragrant.
  3. Add liquids and simmer: Pour in the chicken broth, coconut milk, diced tomatoes, tomato paste, and sugar. Stir everything together thoroughly. Bring the mixture to a boil, then cover with a lid and reduce heat to low. Let it simmer gently for 20 minutes to allow the flavors to meld and the sauce to thicken slightly.
  4. Garnish and serve: Stir the curry lightly, then sprinkle chopped parsley over the top. Serve the coconut chicken curry hot over cooked rice or your preferred side dish.
