Cauliflower Rice:

  • 1 large head of cauliflower
  • 1 tbsp avocado or olive oil
  • 2 garlic cloves, minced
  • 1/2 large onion, chopped

Cilantro Lime Sauce:

  • 1/4 cup chopped cilantro
  • 3 tbsp avocado or olive oil
  • 1 tbsp white vinegar
  • 1 garlic clove, minced
  • Juice of 1 lime
  • 1/2 tsp cumin
  • 1/2 tsp salt

Instructions

  1. Rice your cauliflower: Chop your head of cauliflower into florets, then place them inside a food processor. Pulse until the cauliflower attains a rice-like texture.
  2. Sauté aromatics and cauliflower rice: Heat a large skillet over medium heat and add the oil. Sauté the chopped onion and minced garlic for 3-4 minutes until fragrant. Then add the cauliflower rice and continue to sauté until heated through.
  3. Make the cilantro lime sauce: In a food processor or blender, combine chopped cilantro, white vinegar, minced garlic, lime juice, cumin, and salt. While the motor is running, slowly add the remaining oil and blend until smooth.
  4. Combine and serve: Pour the cilantro lime sauce over the cooked cauliflower rice. Mix thoroughly until the sauce is fully incorporated. Remove from heat and serve immediately.
