Ingredients
Scale
Main Ingredients
- 6 tablespoons salted butter
- 10 ounce bag mini marshmallows (approximately 6 cups)
- ½ teaspoon vanilla extract
- 4 ½ cups holiday Rice Krispies cereal
Instructions
- Prepare Baking Dish: Line an 8×8 or 9×9 baking dish with overlapping pieces of parchment paper cut to size. Lightly grease the parchment paper to hold it in place.
- Melt Butter and Marshmallows: Melt the butter over medium heat in a large pot. Once melted, add the mini marshmallows and stir to coat them in the melted butter until the marshmallows are completely melted.
- Add Vanilla Extract: Remove the marshmallow mixture from heat and stir in the vanilla extract.
- Combine with Cereal: Add the holiday Rice Krispies cereal to the marshmallow mixture and gently fold it in until completely coated.
- Transfer to Baking Dish: Transfer the mixture to the prepared baking dish and smooth into an even layer using a gentle hand to maintain a gooey texture without packing too firmly.
- Set the Treats: Cover the dish and allow the treats to set at room temperature for at least 1 hour. For a firmer texture, store in the refrigerator, but room temperature setting is recommended for gooey treats.
- Slice and Serve: Remove the parchment paper, slice the treats into squares, and serve.
- Storage: Store the treats in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
Notes
- Microwave Method: Melt the butter and marshmallows together in a microwave-safe bowl in 30-second intervals, stirring after each, until completely melted. Stir in vanilla extract, add cereal, then transfer to baking dish.
- Doubling Recipe: To fill a 9×13 baking pan, double all ingredient quantities.
- Gooey Texture Tip: Avoid packing the mixture too firmly into the pan to keep treats soft and chewy.
- Storage Tip: Room temperature storage keeps treats soft; refrigeration firms them up.
