Instructions
- Prepare baking sheets. Line 2 cookie sheets with parchment paper and set aside for easy cookie removal and cleanup.
- Combine dry ingredients. In a medium bowl, whisk together flour, cornstarch, baking soda, and salt. Set aside.
- Cream butter and sugars. In the bowl of a standing mixer, beat the softened butter with light brown sugar and white sugar for about 1 minute or until the mixture is creamy and well combined.
- Add egg and vanilla. Mix in the egg and vanilla extract until fully incorporated, ensuring a smooth batter.
- Incorporate dry ingredients. Scrape down the sides of the bowl and gradually add the dry flour mixture, mixing until just combined.
- Fold in chocolate chips and M&Ms. Switch to a wooden spoon to gently fold in the semi-sweet chocolate chips and Christmas M&Ms; this prevents the M&Ms from breaking apart.
- Scoop and top cookie dough balls. Scoop dough into balls on the prepared cookie sheets, spacing about 8 per sheet. Press 2-3 extra M&Ms and chocolate chips on top of each ball for decoration, then roll into smooth balls.
- Chill dough (optional). Optionally cover the dough with plastic wrap and refrigerate for 30 minutes or refrigerate overnight in a sealed bag. If chilled overnight, let dough rest at room temperature for 15-20 minutes before baking.
- Preheat oven and bake. Preheat oven to 350 degrees Fahrenheit. Bake the cookies for 10 minutes until they appear slightly underbaked but set.
- Cool cookies. Remove cookies from oven and let them cool on the baking sheet to finish setting before transferring to a wire rack or serving.
