Description

Choriqueso, also known as Chorizo Queso Fundido, is a warm and cheesy Mexican appetizer featuring spicy chorizo sausage cooked with onions, garlic, jalapeño, and melted Mexican cheeses. This crowd-pleasing dish is great for dipping with tortillas or chips and is perfect for sharing.

  • 8 ounces chorizo
  • ¼ white onion, diced
  • 1 garlic clove, diced
  • 1 jalapeño, diced (or 1 serrano for extra spice)
  • 4 cups shredded Mexican cheeses (such as asadero, Oaxaca, Chihuahua, or Mexican muenster)

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF to prepare for baking the final dish.
  2. Cook Chorizo: Remove chorizo from casing and place it in an oven-safe frying pan or cast-iron skillet over medium heat. Break it into small pieces with the back of a spoon and cook about 7 minutes until fully cooked.
  3. Drain Excess Oil: Remove the chorizo from the pan, leaving 1-2 tablespoons of oil in the skillet. Drain the remaining chorizo oil through a mesh sieve into a bowl and set chorizo aside.
  4. Sauté Vegetables: In the same skillet with the reserved oil, add diced onion, garlic, and jalapeño. Sauté for about 6 minutes until soft and fragrant.
  5. Combine Chorizo and Veggies: Turn off the heat and mix the cooked chorizo back into the sautéed vegetables. Remove half of this mixture and set aside for topping later.
  6. Layer Cheese and Chorizo: Spread the remaining chorizo mixture evenly in the skillet and top with shredded cheese. Then sprinkle the reserved chorizo mixture over the cheese layer for extra flavor.
  7. Bake Until Golden: Place the skillet in the oven and bake for 12-15 minutes until the cheese is completely melted and golden brown on top.

Notes

  • Substitute serrano pepper for jalapeño for a spicier kick, or use both for even more heat.
  • Using a blend of two Mexican cheeses enhances flavor and meltability. Good choices include asadero, Chihuahua, Oaxaca, or Mexican muenster.
  • If authentic Mexican cheeses are unavailable, Monterey Jack or mozzarella are good alternatives for melting.
  • Serve immediately while hot with warm tortillas or tortilla chips for dipping.
