Ingredients
Scale
Vegetables
- 1 yellow onion, halved and thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
Chicken
- 1 1/4 pounds boneless skinless chicken breasts, thinly sliced
Seasonings and Others
- 2 tablespoons olive oil, divided
- 1 1/2 teaspoons Italian seasoning
- 1/2 teaspoon smoked paprika
- Kosher salt and fresh ground black pepper to taste
- 1 cup shredded provolone cheese
Instructions
- Prepare the vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the thinly sliced bell peppers and onion. Season with plenty of salt and pepper. Sauté the vegetables until they become very tender, about 8-10 minutes. Then remove them from the skillet and place them on a plate.
- Cook the chicken: Add the remaining tablespoon of olive oil to the now-empty skillet. Add the thinly sliced chicken breasts along with Italian seasoning, smoked paprika, salt, and pepper. Spread the chicken out in a single layer and let it cook undisturbed for a couple of minutes to brown the bottom.
- Sauté chicken thoroughly: Continue cooking the chicken, stirring occasionally, until it is fully cooked through, about 8-10 minutes more.
- Combine ingredients: Return the sautéed onions and peppers along with any juices on the plate back into the skillet with the cooked chicken. Stir everything together to combine evenly.
- Add cheese and melt: Evenly top the chicken and vegetable mixture with shredded provolone cheese. Cover the skillet with a lid and let it sit over low heat until the cheese melts, about 3-5 minutes.
- Serve: Once the cheese is melted and bubbly, remove from heat and serve the skillet hot.
Notes
- Thinly slicing the chicken allows for quick and even cooking.
- If you prefer a spicier dish, add a pinch of red pepper flakes with the seasonings.
- Provolone cheese can be substituted with mozzarella or cheddar for different flavor profiles.
- Cooking the vegetables thoroughly before removing helps develop sweeter flavors.
- Use a non-stick or well-seasoned skillet to prevent sticking and ensure even browning.
