Description

Salad Mixture

  • 3 cups chopped romaine lettuce
  • 1 1/2 cups chopped cooked chicken, grilled, fried, or rotisserie
  • 1/3 cup Caesar dressing
  • 1/3 cup freshly grated Parmesan cheese
  • 1/2 cup homemade croutons
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Wraps

  • 4 flour tortillas or wraps, 10-inch

Instructions

  1. Mix the salad: In a large bowl, combine chopped romaine lettuce, cooked chicken, Caesar dressing, grated Parmesan cheese, and homemade croutons. Toss everything well using tongs. Season with kosher salt and freshly ground black pepper to your taste. Taste and add more dressing if desired. Set aside.
  2. Warm the tortillas: Heat a large pan over medium heat and warm each tortilla for about 15 to 30 seconds per side until they are pliable. Alternatively, warm them in the microwave between paper towels for 15 to 30 seconds. Place warmed tortillas on a plate and cover with a kitchen towel to keep warm.
  3. Assemble the wraps: Lay each warm tortilla flat on a clean surface. Divide the Caesar salad mixture evenly among the tortillas, placing it in the center. Fold in the opposite sides of the tortilla, then roll it up burrito-style. Secure with a toothpick if needed and cut in half or serve whole.
