Instructions
- Preheat the grill: Preheat your Blackstone or similar griddle to medium heat, then add a thin coat of oil to the cooking surface to prevent sticking and ensure even cooking.
- Cook the potatoes: Place the diced Yukon gold potatoes on one side of the grill. Let them cook for about 15 minutes before flipping to cook evenly on all sides.
- Cook the bacon: While the potatoes cook, add the bacon to the other half of the grill. Cook for about 5 minutes per side or until the bacon reaches your desired crispiness. Remove the bacon from the grill and set aside for later use.
- Flip the potatoes: After removing the bacon, flip the potatoes for thorough cooking. Add more oil if the potatoes appear dry to prevent sticking.
- Cook the chicken: Add the cubed chicken breasts to the grill, cooking them in the bacon grease for added flavor. Season the chicken and potatoes with salt, paprika, garlic powder, onion powder, and ranch seasoning. Cook chicken for about 6-8 minutes per side until fully cooked through.
- Combine and melt cheese: Once the chicken is cooked, mix the potatoes with the chicken on the grill surface. Layer shredded cheddar cheese and the crispy bacon pieces over the top. Continue cooking on the grill until the cheese is completely melted.
