Sandwich Filling
- 2–3 slices deli turkey
- 3 slices genoa salami
- 6 slices deli pepperoni
- 1 cup shredded iceberg lettuce
- 5 slices red onion
- 1 roma tomato sliced
- ¼ cup banana peppers plus a few splashes of jarred brine
- ¼ cup mayonnaise
- 2 tablespoons grated Parmesan cheese
- ½ tsp Italian seasoning
- 2 tablespoons red wine vinegar
- Salt and black pepper to taste
Cheesy Garlic Buns
- 6 Hawaiian-style sweet rolls sliced into two 3-roll buns
- 4 tablespoons softened butter
- ½ tsp garlic powder or 2 garlic cloves pressed/grated
- 1 tsp dried parsley
- 4–6 slices provolone or swiss cheese
Optional Topping
- Crushed Nacho Doritos
Instructions
- Prepare Chopped Sub Filling: On a large cutting board, spread a base of shredded lettuce. Layer turkey, salami, and pepperoni slices, followed by red onion, tomato, and banana peppers. Dollop mayonnaise over the layers, then sprinkle Parmesan cheese, Italian seasoning, red wine vinegar, and a few splashes of banana pepper brine. Season with salt and black pepper. Chop the entire mixture finely with a sharp knife until well combined, tasting and adjusting seasoning as needed.
- Prepare Cheesy Garlic Rolls: Preheat the oven to broil and line a baking sheet with parchment paper. Slice Hawaiian rolls into sets of three attached rolls to form hoagie-sized buns, slicing horizontally but keeping one side attached. Mix softened butter with garlic and parsley in a small bowl. Spread this mixture generously on the cut sides of the rolls. Place rolls open-faced on the baking sheet and toast under the broiler for 1-2 minutes until golden brown, watching closely to prevent burning.
- Add Cheese and Melt: Remove toasted rolls from the oven and layer 2-3 slices of provolone or Swiss cheese inside each bun, covering the surface. Return the rolls to the broiler for another 1-2 minutes until the cheese is fully melted and bubbling.
- Assemble and Serve: Divide the chopped sub filling between the two cheesy garlic buns. If desired, sprinkle or press crushed Nacho Doritos on top for extra crunch. Serve immediately while the bread is warm and cheese melted.
Notes
- Deli meat selections can be varied; capicola, prosciutto, or ham make excellent substitutes.
- To achieve a firmer toasted bun, toast the rolls face-down under the broiler before buttering and toasting the inside.
- Monitor rolls closely when broiling to avoid burning the garlic butter and cheese.
- The optional crushed Doritos add a unique crunch and flavor layering to the sandwich.
