Description

A delightful Crescent Breakfast Ring featuring scrambled eggs, crispy bacon, bell peppers, and melted cheddar cheese wrapped in flaky crescent rolls. Perfect for a cozy breakfast or brunch gathering, this recipe combines savory flavors and an inviting golden crust.

Ingredients

Scale

Egg Mixture

  • 5 large eggs
  • ½ medium red bell pepper (chopped)
  • ½ medium green bell pepper (chopped)
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Main Filling

  • 8 slices bacon (fried)
  • 1 cup cheddar cheese (shredded)

Dough and Egg Wash

  • 8 ounce crescent rolls (refrigerated, 1 can)
  • 1 large egg (for egg wash, optional)

Instructions

  1. Preheat Oven: Preheat the oven to 375℉ to ensure it is ready when the ring assembly is complete.
  2. Cook Egg Mixture: In a bowl, beat 5 eggs with chopped red and green bell peppers, salt, and pepper. Cook the mixture in a skillet, preferably the same one used for frying bacon after draining the fat, and scramble until just set but still soft.
  3. Prepare Crescent Dough: Lay out crescent rolls on a parchment paper in a star shape as shown in pictures.
  4. Assemble Ring: On each crescent triangle, place one slice of fried bacon. Sprinkle half of the shredded cheddar cheese evenly around the ring over the bacon pieces. Add the scrambled eggs atop the cheese, then finish with the remaining cheese on top.
  5. Fold Crescents: Fold the crescent roll dough over the filling to enclose it. Optionally, brush the ring with the beaten egg wash to achieve a golden brown crust during baking.
  6. Bake: Transfer the parchment paper with the assembled ring to a large baking sheet carefully. Bake in the preheated oven for 20 minutes or until the crescent dough is golden brown and cooked through.
  7. Serve: Garnish with parsley if desired and serve warm to enjoy the flaky dough and melted cheese.

Notes

  • Keep the dough cold until assembly to make it easier to unroll and shape.
  • Fully cook bacon and vegetables beforehand to prevent soggy dough.
  • Scramble eggs to just set and remain soft, as they will finish cooking in the oven.
  • Customize fillings by swapping cheese or adding cooked vegetables or meats, but keep the filling balanced for even baking.
  • Can be assembled the night before and refrigerated, then baked fresh in the morning.
  • Best served warm to enjoy flaky crescent dough and melty cheese.
