Instructions

  1. Prepare Carrots: Shred the carrots on the large side of a box grater, then roughly chop the shreds into smaller pieces to maintain texture in the dip.
  2. Caramelize Carrots: Melt butter in a medium skillet over medium-high heat. Add brown sugar, cinnamon, and carrots; cook for 6 minutes until liquids evaporate and carrots are tender and lightly browned. Remove from heat and cool completely, reserving 1 tablespoon for garnish.
  3. Mix Cream Cheese Base: In a large bowl, beat cream cheese with brown sugar and cinnamon on medium-high speed for 2-3 minutes until fluffy and smooth.
  4. Add Liquids: Mix in heavy cream and vanilla extract on low speed until fully incorporated.
  5. Incorporate Powdered Sugar: Add powdered sugar; mix on low until just incorporated, then increase speed to medium-high and beat 1-2 minutes until fluffy and smooth.
  6. Fold in Pecans and Carrots: Gently fold chopped pecans and cooled caramelized carrots into the cream cheese mixture. Cover with plastic wrap and refrigerate for 30 minutes.
