Instructions

  1. Prepare Chicken: Place the chicken breast in a pot of water and bring to a gentle boil. Cook gently for 15 minutes until fully cooked through. Remove chicken and shred it finely using two forks. Toss the shredded chicken with the blue cheese dressing and set aside. For added flavor, you may add 1-2 chicken bouillon cubes to the boiling water.
  2. Sauté Vegetables: In a large high-walled skillet over medium heat, melt 1 tablespoon of butter. Add the diced onion and celery and cook for 5 minutes until softened. Add the minced garlic and sauté for an additional 1 minute, releasing the aromatic flavors.
  3. Add Liquids and Pasta: Pour in the undrained diced tomatoes and 4 cups of chicken broth. Bring the mixture to a boil. Submerge the penne pasta completely into the boiling liquid and cover. Cook for 13 minutes or until the pasta is al dente, stirring occasionally underneath the pasta with a silicone spatula to prevent sticking. Test pasta doneness before proceeding.
