Instructions
- Preheat and prepare carrots: Preheat the oven to 400 degrees Fahrenheit and spray a baking sheet with non-stick cooking spray. Peel and slice the carrots diagonally, then place them in a large bowl.
- Make glaze: Melt the unsalted butter in a microwavable bowl. Add brown sugar, minced garlic, pepper, and salt. Stir until the mixture is well combined.
- Coat carrots: Pour the butter and brown sugar glaze over the sliced carrots and toss thoroughly to coat them evenly with the glaze.
- Roast carrots: Spread the glazed carrots in an even layer on the prepared baking sheet. Bake for 15 minutes.
- Stir and continue baking: After 15 minutes, stir the carrots to ensure even caramelization. Return to the oven and bake for an additional 15 minutes or until the carrots are tender and caramelized.
- Garnish and serve: Remove the carrots from the oven and garnish with fresh chopped parsley before serving.
Notes
- Store leftover glazed carrots in an airtight container in the refrigerator for 3 to 5 days.
- Reheat leftovers in the microwave for 1 to 2 minutes or in a 350°F oven for about 5 minutes.
- For make ahead, peel and slice carrots up to 3 days in advance and store in an airtight container, then prepare the glaze and roast fresh when ready.
- Use fresh garlic instead of minced garlic for a stronger flavor if preferred.
- Adjust brown sugar quantity to taste for more or less sweetness.
