Blackened Chicken
- 1½ lbs chicken tenderloins
- Blackened cajun seasoning to taste (see notes below)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 garlic cloves minced
Cajun Alfredo Sauce
- 5 tablespoons butter
- 1 cup half and half
- 1 cup heavy cream
- 1 tablespoon blackened cajun seasoning, more if desired
- Salt and pepper to taste
- 1 cup freshly grated parmesan cheese
Garlic Bread Sliders
- 9 slider buns
- 5 tablespoons butter, melted
- 4 garlic cloves minced
- 2 teaspoons parsley flakes
Assembly
- 1½ cups Monterey Jack cheese, shredded, divided
- 6 slices bacon, cooked crisp and halved
Instructions
- Cook the chicken: Heat olive oil in a large skillet over medium heat. Season the chicken tenderloins evenly with blackened cajun seasoning. Cook chicken for about 6 minutes, flipping once until mostly cooked through.
- Add garlic butter: Push the chicken to one side of the pan. Add 2 tablespoons butter and 3 cloves minced garlic to the empty side of the skillet. Toss the chicken in the garlic butter mixture, then transfer chicken to a bowl and tent with foil to keep warm.
- Prepare Cajun Alfredo sauce: Using the same pan over medium-low heat, add 5 tablespoons butter, half and half, heavy cream, 1 tablespoon blackened cajun seasoning, salt, and pepper. Bring mixture to a low gentle boil while whisking frequently for 5 minutes.
- Finish sauce: Stir in the freshly grated parmesan cheese and cook until melted and thickened. Remove from heat and set aside; the sauce will continue to thicken as it cools.
- Prepare slider buns: Preheat the oven broiler. Split the slider buns and place them cut-side up on a baking sheet. Mix melted butter with minced garlic and parsley flakes. Spread half the garlic butter mixture inside the buns. Broil buns until golden brown.
- Assemble sliders: Preheat oven to 375°F. Sprinkle ¾ cup shredded Monterey Jack cheese evenly on bottom buns. Layer cooked chicken, crispy bacon halves, remaining Monterey Jack cheese, and spoon Cajun Alfredo sauce evenly over top.
- Finish baking: Place the top slider buns on each assembled slider. Spread the remaining garlic butter over the tops of the buns. Bake the sliders for 20 minutes in the oven. Tent with foil halfway through if the tops brown too quickly.
- Serve: Slice sliders and serve warm with extra Cajun Alfredo sauce for dipping.
