Description

Beef and Broccoli Ingredients:

  • 1 lb flank steak, very thinly sliced into bite-sized strips
  • 2 Tbsp olive oil, divided
  • 1 lb fresh broccoli, cut into 6 cups of florets
  • 2 tsp sesame seeds, optional garnish

Stir Fry Sauce Ingredients:

  • 1 tsp fresh ginger, grated (loosely packed)
  • 2 tsp garlic, grated (from 3 cloves)
  • 1/2 cup hot water
  • 6 Tbsp low sodium soy sauce
  • 3 Tbsp packed light brown sugar
  • 1 1/2 Tbsp corn starch
  • 1/4 tsp black pepper
  • 2 Tbsp sesame oil

Instructions

  1. Prep: Start by cooking white rice so it will be ready when the stir fry is finished. Place the flank steak in the freezer for 30 minutes to firm it up, then thinly slice it against the grain into bite-sized strips.
  2. Make the Sauce: In a bowl, combine grated ginger, grated garlic, hot water, low sodium soy sauce, light brown sugar, corn starch, black pepper, and sesame oil. Stir well to dissolve the sugar and corn starch, then set the sauce aside.
  3. Cook Broccoli: Heat 1 Tbsp of olive oil in a large skillet over medium heat. Add broccoli florets and sauté them for 4-5 minutes partially covered with a lid, stirring or tossing occasionally until the broccoli is bright green and crisp-tender. Remove from pan. For softer broccoli, add 2 Tbsp water before covering to steam cook.
  4. Cook Beef: Increase the heat to high and add the remaining 1 Tbsp olive oil to the skillet. Add the sliced beef in a single layer and sauté for 2 minutes on each side until just cooked through. Test doneness by quickly pulling out a piece.
  5. Combine and Simmer: Pour the prepared stir fry sauce into the skillet with the beef, reduce the heat to medium-low, and let it simmer for 3-4 minutes until thickened. Stir in the cooked broccoli and toss to combine. Add 1-2 Tbsp water to thin the sauce if desired. Serve hot over cooked white rice and garnish with sesame seeds if using.

Notes

  • Use fresh vegetables for the best texture and flavor; frozen vegetables tend to release excess water.
  • Substitute flank steak with top sirloin, top round, tri-tip, or ribeye for different flavor and tenderness.
  • For softer broccoli, add water to steam while cooking.
  • Adjust the sweetness or saltiness of the sauce by varying the brown sugar or soy sauce amounts to taste.
  • To save prep time, buy pre-sliced beef or ask your butcher to slice thinly against the grain.
