Scale
Vegetables
- 4 bell peppers (any color) sliced
- 2 white onions sliced
Protein & Dairy
- 1 pound Italian sausage sweet, mild, or hot
- Basil for serving
- Parmesan cheese for serving
Pantry Items
- 2 Tablespoon olive oil
- 1 Tablespoon Italian seasoning
- 1 teaspoon kosher salt (omit if seasoning contains salt)
- 1½ cup marinara sauce for dipping
Instructions
- Preheat Oven: Preheat the oven to 425 degrees Fahrenheit to ensure it is hot and ready for roasting the sausage and vegetables.
- Prepare Vegetables and Sausages: Spread the sliced bell peppers and onions on a large sheet pan. Toss with olive oil, Italian seasoning, and kosher salt. Nestle the Italian sausages among the vegetables for even cooking.
- Initial Bake: Bake in the preheated oven for 15 to 20 minutes. Remove the tray, flip the sausages, and stir the peppers and onions to promote even browning and prevent burning.
- Finish Cooking with Sauce: Pour the marinara sauce into an oven-safe bowl and place it in the oven along with the sheet pan. Continue baking for an additional 10 to 15 minutes or until the sausages are thoroughly cooked.
- Serve: Remove from the oven and serve topped with fresh basil and grated parmesan cheese for added flavor and garnish.
Notes
- Use any color bell peppers based on your preference or what you have available.
- If your Italian seasoning blend contains salt, omit the kosher salt to avoid oversalting.
- Marinara sauce can be served warm for dipping or poured over the sausages and peppers when serving.
- For extra heat, opt for hot Italian sausage instead of sweet or mild.
- Leftover sausages and vegetables can be stored in an airtight container in the refrigerator for up to 3 days.
