Ingredients
Scale
Chicken
- 4 small boneless skinless chicken breasts – pounded to ¾ to 1-inch thickness (about 1 ½ pounds)
Seasonings
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- ¾ tsp kosher salt
- ¼ tsp ground black pepper (heaping)
Honey Mustard Sauce
- 1 cup honey mustard sauce – homemade or quality mayo-based brand (divided)
Optional Garnishes
- torn basil leaves
- chopped flat-leaf parsley
Instructions
- Preheat Oven and Grease Baking Pan: Arrange the oven rack to the center position. Close the oven door and preheat the oven to 375 degrees F if using convection or 400 degrees F for standard ovens. Grease an 8×11-inch baking dish with non-stick cooking spray and set aside.
- Combine Chicken Seasonings: In a small bowl, mix together garlic powder, onion powder, smoked paprika, Italian seasoning, kosher salt, and ground black pepper.
- Pat Dry and Season Chicken Breasts: Pat the chicken breasts dry with paper towels and evenly season both sides with the prepared seasoning mixture.
- Add Chicken to Baking Dish: Place the seasoned chicken breasts in an even, single layer in the prepared baking dish, making sure they do not overlap.
- Pour Honey Mustard Sauce Over Chicken: Pour ¾ cup of honey mustard sauce evenly over the chicken breasts.
- Bake Honey Mustard Chicken: Cover the baking dish with aluminum foil and bake for 15 minutes. Afterward, remove the foil and pour the remaining ¼ cup honey mustard sauce over the chicken. Return the dish to the oven and bake uncovered for an additional 15 minutes or until the internal temperature reaches 165 degrees F using a meat thermometer.
- Let Chicken Rest: Remove the chicken from the oven and tent the baking dish lightly with foil. Allow the chicken to rest for 5 to 10 minutes before serving to retain juices.
- Serve Baked Honey Mustard Chicken: Garnish with torn basil and/or chopped flat-leaf parsley, then serve and enjoy this delicious, juicy chicken dish.
Notes
- For even cooking, make sure chicken breasts are pounded to an even thickness between ¾ and 1 inch.
- You can use a quality store-bought mayo-based honey mustard sauce or make your own for best flavor.
- Covering the dish with foil during the first part of baking keeps the chicken moist and tender.
- If you prefer, scale the recipe up or down using the sliding scale on the recipe card for desired servings.
- Use a meat thermometer to check for doneness to ensure food safety and perfect tenderness.
- Letting the chicken rest after baking allows the juices to redistribute for maximum moistness.
- Optional fresh herbs add a bright, fresh finish to the dish.
