- 1 head cauliflower, cut into florets
- 3/4 cup all-purpose flour
- 1 teaspoon ground paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 3/4 cup buttermilk
- 2 tablespoons butter, melted
- 1/3 cup Buffalo Sauce (such as Frank’s)
Instructions
- Preheat Oven: Preheat your oven to 375°F and line two baking sheets with parchment paper to prepare for baking.
- Make Batter: In a large bowl, combine the flour, ground paprika, onion powder, garlic powder, and salt. Stir in the buttermilk until the mixture becomes thick and smooth.
- Coat Cauliflower: Add the cauliflower florets into the batter and toss well until each piece is fully coated with the mixture.
- Arrange on Baking Sheets: Spread the coated cauliflower onto the prepared baking sheets, making sure to leave space between florets to allow for even crisping.
- Bake First Side: Bake in the oven for 20 minutes until the edges start to turn golden brown.
- Flip Cauliflower: Carefully flip each piece to the other side to ensure even baking and return to the oven.
- Bake Second Side: Continue baking for an additional 20 minutes until the cauliflower is crispy and cooked through.
- Prepare Buffalo Sauce: While baking, whisk together the Buffalo sauce and melted butter in a bowl until smooth and combined.
- Toss & Serve: Once cauliflower is baked, transfer to the bowl with buffalo sauce and toss until evenly coated. Serve immediately and enjoy!
Notes
- If you don’t have buttermilk, make a substitute by adding 1 tablespoon of apple cider vinegar or lemon juice to 3/4 cup of milk (regular or plant-based) and let it sit for 5 minutes to thicken.
- For a vegan version, use plant-based buttermilk and replace butter with coconut oil or vegan butter.
- To make gluten free, substitute all-purpose flour with gluten-free flour.
- Be sure to space out cauliflower pieces on the baking sheet so they crisp evenly on all sides.
