Description

A fresh and vibrant avocado salad combining ripe avocados, crisp cucumbers, and a zesty lime dressing, perfect as a refreshing side dish for any meal.

Salad:

  • 2 big ripe avocados, cut into quarters then 1 cm slices
  • 3 cucumbers (~17 cm long), sliced into 4 mm rounds
  • 1/4 red onion, finely sliced
  • 2 tbsp dill, finely chopped (optional)
  • 2 tbsp coriander/cilantro leaves, roughly chopped (optional)

Dressing:

  • 3 tbsp extra virgin olive oil
  • 3 tbsp lime juice (or lemon juice, adjust to taste)
  • 1/4 tsp chili flakes / red pepper flakes
  • 1/4 tsp black pepper
  • 3/4 tsp cooking / kosher salt

Instructions

  1. Combine Ingredients: Put all the salad ingredients including the sliced avocados, cucumbers, red onion, dill, and coriander into a large bowl.
  2. Add Dressing: Drizzle over the lime juice and extra virgin olive oil, then sprinkle with salt, black pepper, and red chili flakes to taste.
  3. Toss Salad: Gently toss the salad using your hands, carefully separating the avocado slices to avoid mashing them, ensuring even coating with the dressing.
  4. Adjust and Serve: Taste the salad and add more lime juice if desired, then tumble the salad into a serving bowl and serve immediately for best freshness.

Notes

  • If using longer English cucumbers (~30 cm), use 1 and 1/2 instead of 3 regular cucumbers.
  • Fresh dill and coriander add lovely herbiness but can be omitted if unavailable or substituted with parsley or extra dill.
  • The salad can be kept fresh until the next day with the avocado staying green, but it’s best enjoyed fresh.
