Description

These Air Fryer Southwest Chicken Burritos are a quick and flavorful meal featuring shredded rotisserie chicken mixed with creamy cheese, black beans, sweet corn, tomatoes, and taco seasoning. Wrapped in burrito-sized tortillas and crisped in the air fryer, they make a delicious and easy dinner or lunch option served with pico de gallo and sour cream.

Ingredients

Scale

Main Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 package (8 ounces) cream cheese, room temperature
  • 1½ cups sharp cheddar cheese, shredded
  • 1 cup black beans, drained and rinsed
  • 1 can (15.25 ounces) sweet corn, drained
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 2 tablespoons taco seasoning
  • 1 cup fresh pico de gallo
  • 6 flour tortillas, burrito size
  • cooking spray
  • sour cream, for garnish
  • pico de gallo, for garnish

Instructions

  1. Preheat Air Fryer: Preheat your air fryer to 400°F to ensure it is ready for cooking the burritos evenly and quickly.
  2. Prepare Filling: In a large bowl, combine shredded rotisserie chicken, softened cream cheese, shredded sharp cheddar, black beans, drained sweet corn, drained diced tomatoes, taco seasoning, and fresh pico de gallo. Mix thoroughly to blend all ingredients well.
  3. Assemble Burritos: Place one burrito-sized flour tortilla on a clean surface. Scoop about 1 cup of the prepared filling into the center. Fold in the sides of the tortilla and then roll from the bottom up tightly to secure the filling inside.
  4. Spray Burritos: Lightly spray the outside of each burrito with cooking spray to promote browning and crispiness in the air fryer.
  5. Air Fry First Side: Place the burritos into the preheated air fryer basket (arrange without overcrowding) and cook for 5 minutes to start crisping the bottom side.
  6. Flip and Cook Second Side: Carefully flip each burrito over, spray the flipped side with cooking spray, then air fry for an additional 5 minutes until both sides are golden and the filling is heated through.
  7. Serve: Remove the burritos from the air fryer and serve warm, garnished with extra pico de gallo and sour cream as desired.

Notes

  • You can bake these burritos in the oven by preheating to 400°F and placing them on a parchment-lined baking sheet for 10-15 minutes, turning once halfway through, until heated and tortillas are crispy.
  • If you prefer a spicier burrito, add diced jalapeños or a few dashes of hot sauce to the filling mixture.
  • For a lighter option, substitute flour tortillas for whole wheat or low-carb tortillas.
  • Leftover burritos can be wrapped tightly in foil and refrigerated for up to 3 days, then reheated in the air fryer or oven for maintaining crispiness.
