Filet Mignon
- 2 filet mignon steaks, about 8 oz each
- 1 Tablespoon olive oil
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon ground black pepper
Garlic Herb Butter
- 2 Tablespoons unsalted butter, softened
- 1 teaspoon fresh parsley, diced
- 1 teaspoon fresh thyme, diced
- 1 teaspoon fresh rosemary, diced
- 1 clove garlic, minced
Instructions
- Bring Steaks to Room Temperature: Remove the steaks from the refrigerator 30 minutes before cooking to ensure even cooking and better texture.
- Prepare Garlic Herb Butter: In a small bowl, combine softened butter, diced parsley, thyme, rosemary, and minced garlic. Mix well and place into the refrigerator to harden before serving.
- Season the Steaks: Pat the steaks dry with paper towels. Rub them all over with olive oil, then season both sides evenly with sea salt and ground black pepper.
- Preheat Air Fryer: Set your air fryer to 400°F to reach the optimal temperature for cooking the steaks.
- Cook the Steaks: Place the steaks in the air fryer basket without overcrowding. Cook for 10-11 minutes total for medium-rare doneness, flipping the steaks halfway through cooking. Use an instant-read thermometer to ensure an internal temperature of 130°F.
- Rest and Serve: Transfer steaks to a plate, top each with half of the prepared garlic herb butter. Loosely cover with aluminum foil and let them rest for 10 minutes to allow juices to redistribute and butter to melt into the meat.

- A 7-ounce filet mignon will take about 10 minutes to reach medium-rare, while a 10-ounce steak will take about 13 minutes.
- Doneness guide for 8-ounce steaks (1.5″ thick): Rare 9-10 min, Medium Rare 10-11 min, Medium 11-12 min, Medium Well 12-13 min, Well Done 13-14 min.
- Target internal temperatures before resting: Rare 120°F, Medium Rare 130°F, Medium 140°F, Medium Well 150°F, Well Done 160°F; after resting add about 5°F for final temps.

- To reheat, air fry at 350°F for 3-4 minutes, taking care to avoid overcooking.
