Description

This Viral Air-Fryer Tortilla Kebab Skewers recipe combines seasoned extra lean beef mince with finely chopped bell peppers and onions, layered between tortilla wraps, then air-fried to golden perfection. It’s a fun twist on kebabs that is juicy, flavorful, and perfect for a quick main course or appetizer.

Ingredients

Scale

Meat Mixture

  • 500 g Extra Lean Beef Mince (1.1 lbs)
  • 1 Red Bell Pepper
  • 1 Red Onion
  • 3 cloves Garlic
  • 1 tbsp Smoked Paprika
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Salt
  • ½ tsp Black Pepper

Tortilla Wraps

  • 5 Tortilla Wraps

Instructions

  1. Prepare Vegetables: Finely dice the red bell pepper and red onion, then mince the garlic cloves. Using a food processor can help achieve a perfect fine chop for even mixing.
  2. Mix Ingredients: In a large bowl, combine the beef mince, chopped vegetables, garlic, smoked paprika, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly until all ingredients are well combined.
  3. Trim Tortillas: Remove the rounded edges from each tortilla wrap to form large squares suitable for layering.
  4. Assemble Layers: Place one tortilla square on a clean surface and spread a thin, even layer of the beef mixture on top. Repeat layering with tortillas and beef mixture until all is used, finishing with a tortilla on top. Press down firmly to compact the stack evenly.
  5. Cut Strips: Using a sharp knife, slice the stacked tortillas lengthwise into six long strips.
  6. Skewer Strips: Carefully lay each strip on its side to show the layers, then insert a skewer lengthwise through each strip to hold the layers together.
  7. Segment Skewers: Cut across each skewered strip to create approximately eight individual kebab skewers.
  8. Preheat Air Fryer: Set the air fryer temperature to 190°C (375°F) and allow it to preheat.
  9. Cook Skewers: Place the skewers in a single layer inside the air fryer basket. Air-fry for 8 minutes, turning the skewers halfway through cooking, until they are cooked through and lightly golden on all sides.
  10. Serve Hot: Remove the skewers from the air fryer and serve immediately with guacamole or your favorite dipping sauce.

Notes

  • Spread the beef mince thinly and evenly for thorough cooking and juicy skewers.
  • Chop vegetables finely to reduce moisture and help the layers hold together firmly.
  • Press the tortilla stack firmly to keep layers compact before slicing and skewering.
  • Cook skewers in a single layer for best crisping and even color.
  • Turn the skewers halfway through air-frying to achieve a golden finish on all sides.
  • Serve the skewers straight from the air fryer for optimal crisp tortilla and juicy beef texture.
  • Use a kitchen scale for precise measurements to ensure consistent results.
  • Uncooked skewers can be stored in an airtight container and air-fried before serving for meal prep convenience.
